SAMPLE RECIPE Salmon and Black Bean Burritos | 1/4 cup OLIVE OIL
2 Tbsp. LEMON JUICE
2 cloves GARLIC, minced
4 Tbsp. chopped fresh CILANTRO
1/2 tsp. SALT
1 can (20 oz.) CRUSHED PINEAPPLE
1 RED BELL PEPPER, diced
1 JALAPEÑO, minced
2 GREEN ONIONS, chopped
1 1/2 lbs. SALMON, cooked and flaked
1 can (15 oz.) BLACK BEANS, rinsed
8 large FLOUR TORTILLAS
In a medium bowl, whisk together olive oil, lemon juice, garlic, cilantro and salt. Add pineapple, red bell pepper, jalapeño and green onions. In a separate bowl, mix salmon and black beans; spoon onto warmed flour tortillas. Top with prepared pineapple salsa and fold tortillas burrito-style.
